Cottonseed is considered among most important crops. It contains about 26 percent oil that in used for vegetable oil production. After oil extraction, the remaining part of the seed know as cottonseed cake with 45 percent protein is routinely used as a protein supplement in feed rations for livestock and less for food use due to presence of gossypol, a toxic constituent of cottonseed. In this study, the production of edible protein concentrate from Varamin variety of cottonseed cake was evaluated according to protein Advisory Group Standard by using mixture of water: acetone: hexane in a ratio of (1: 39: 60), (3: 53: 44) and (3: 67: 30) respectively as a solvent as wet extraction of protein. The fiber content, Protein content, Nitrogen solubility value, oils and free as well as total gossypol contents of all samples were determined. The results showed that the protein concentrate extracted by the mixture of water: acetone: hexane in a ratio of 1: 39: 60 respectively meet the world standards as edible protein.
